At our cooking school, the Good Tastes of Tuscany, you have an experience of a lifetime, where you learn to cook authentic Italian with our gourmet chefs! Just so know what to expect in your class, we have an interview with our Chef Luciano, who tell us all about his passion for food!
When did you know you wanted to be a chef?
I knew I wanted to be a cook, when I was 3 years old. I won a contest that was held in my hometown of Alessandrea, ‘The most beautiful baby in Italy’. The winner was allowed to choose gifts! The gifts I chose were a toy ‘excavator’ because my father was a mechanic and a test driver of excavators. The other gift that I chose, one that completely fascinated me, was a toy kitchen. I used to pretend to be a chef with it.
What is your favorite food memory?
When I was 8 is when I realized my passion for cooking, I learnt how to make dumplings with my maternal grandmother, she was a source of immense knowledge in the kitchen.
How did you train to become a chef?
When the time for me to choose a profession after high school, I decided to apply to a private hotel, that had the reputation but had the advantage of working hands on in a restaurant. Right from day one, I knew what it would feel like to be master chef and worked towards it.I graduated with top honours and then went on to gain some experience to which led me all over Italy and abroad which in turn helped me hone in on my skills and grow as a chef.
How do you get your inspiration?
The inspiration comes from my passion for cooking that drives me to seek new flavors and new sensations of the palate.
Best piece of advice you would five a home enthusiast?
The best advice I can give to a person passionate about cooking is to follow his passion and his instinct to cook and not be afraid to make mistakes, because the best dishes are born from the worst mistakes or last minute adjustments.
Who do you look upto in the cooking industry
Although he is a bit short-tempered (and that could improve) I admire the creativity, experience and genius of Gordon Ramsay . Among Italians, I admire and respect very much the guru of the kitchen Gualtiero Marchesi, and among the younger crowd, Chef Mottura , who is a culinary genius.
Favorite foods to cook with?
I don’t have a favorite food. I like to cook with whatever ingredients are in season and fresh.
What do like to eat at home.
When I’m home I eat simple things, homemade!
What do you love most about your job?
I’ve always enjoyed my work in all of its forms, but what gives me the most satisfaction is that; with my food I create emotions in people who taste it. Now that I’m working with the cooking school “Good Tastes of Tuscany” Lastra a Signa ( Florence ), I have a great time teaching what I have learned in all these years to genuinely nice people who wish to learn Italian cooking; who come to us from all over the world. It’s a new business that gives me great satisfaction and makes me really happy.
