Pasta equipment: Guitar from Abruzzo
La chitarra (maccarunàre in Abruzzese dialect) is a tool that looks like part of a guitar used for traditional Abruzzese
spaghetti or macaroni.
It consists of steel strings set like in a guitar, pushed together in parallel, on a frame of wood.
Pressing with a rolling pin the dough sheet on the wires of the guitar are obtained spaghetti of square section,
said square spaghetti, therefore, particularly suitable for meat sauce and meat sauces.
The sheets of pasta that are passed on the guitar are called in dialect “pettele”.
